Great Christmas cookies (gingerbread men)
  • Timing: about 2-3 hours of happy cookies making
  • Portions: about 35-40 gingerbread men cookies


  • 3.5 oz natural, real butter;
  • cup of brown sugar;
  • 2 large tablespoons of honey;
  • 3 medium eggs;
  • tablespoon of maple syrup;
  • pinch of salt;
  • 2 teaspoons of grinded ginger;
  • 1 teaspoon of cinnamon;
  • 1/4 teaspoon of cardamom;
  • 1/4 teaspoon of cloves;
  • 1/2 teaspoon of baking powder;
  • about 3.5-4 cups (15-16 oz) of regular flour.

For white icing:

  • cup of icing sugar;
  • 1 medium egg white;
  • teaspoon of lemon acid.


  1. So, are you ready? Let’s start it. First, add butter to a saucepan. Constantly stirring with a spoon, cook on a very low heat until it completely melts. Add sugar and honey and stir until everything melts. Remove from the heat and let cool in a room temperature. When its already a bit warm but not hot, beat in eggs one by one. Whisk everything with a wooden fork.
  2. Combine flour with baking powder, add few spoons to your pastry to make it thicker. Then add all spices, maple syrup and mix everything. Step by step, add the rest of the flour and then start kneading pastry with your hands. When pastry is not sticky, roll it again and put in a fridge for 20-30 minutes.
  3. Preheat oven to 180 C (356 F) degrees. Remove pastry from the fridge, sprinkle flour on your rolling surface. Roll medium thick sheets and cut cookies. Put cookie son a baking sheet, on a tin. Add to oven and bake for 15 minutes. Remove cookies; let them stay in a room temperature. When all cookies are ready, don’t forget to put them in a box; otherwise they will become humid and not so tasty.
