Carmelized Onion and Zucchini Pizza

I don’t know about you but we live near a local mom and pops pizza parlor and they are great at what they do.  It takes a strong will not to eat my weight in pizza every time we go there.  As you can imagine after a few visits that doesn’t look pretty on your budget or your caboose.  Make your own pizza dough at home and save money and calories.  Top it with fresh ingredients from your garden and some mozzarella.  It will come out of the oven hot, fresh, and ready to be devoured!

We always have lots of zucchini in our garden so I paired it with some caramelized red onions on this garden fresh pizza.  The dough is really easy to make and best of all you can make it ahead of time.  Store it in the refrigerator or freezer for when you need it.


  • 1 recipe of pizza dough, below;
  • 1 large zucchini, sliced 1/8”thick;
  • 1 red onion, sliced;
  • 2 cloves garlic, minced;
  • 2 tblsp olive oil;
  • 2 cups mozzarella cheese.


Heat 1 tblsp olive oil in a large skillet over medium heat. Add the sliced onions and minced garlic. Turn heat down to low and cook for about 10 minutes until the onions are tender. Roll out pizza dough and drizzle with remaining olive oil. Sprinkle with 1 cup mozzarella cheese. Top with zucchini and onions. Sprinkle with the remaining cheese. Bake per dough instructions.

Pizza Dough

  • 1 1/4 cup warm water;
  • 2 tblsp sugar;
  • 1 1/2 tsp instant yeast;
  • 2 tblsp oil;
  • 3 cups all-purpose flour;
  • 1 tsp. salt;
  • Cornmeal.

In a stand mixer or medium bowl dissolve the sugar in the warm water and add the yeast. Allow to sit for a few minutes. Add the oil, salt, and flour and mix/knead until it forms a ball. Allow to rise until doubled (about an hour). Wrap and store in the refrigerator until you are ready to use or roll out onto a baking sheet sprinkled with cornmeal. Top with your favorite toppings and bake at 425 degrees for 18-20 minutes.
